Deliciously seared fennel with olive oil, salt, and zesty lemon pepper is a quick and flavorful vegan side dish.
Ingredients:
  • 2 pounds fennel bulbs, sliced, green tops reserved
  • 3 tablespoons olive oil, or as needed
  • salt to taste
  • 1 pinch lemon pepper, or to taste
Instructions:
  • Finely chop the fennel greens and put them to the side.
  • In a nonstick pan over medium heat, heat 1 tablespoon oil. Place fennel slices in a single layer in the pan and cook until golden brown on both sides, approximately 5 minutes. Season with salt and lemon pepper, then transfer to a serving platter. Repeat with the remaining fennel slices using another tablespoon of oil. Serve the fennel sprinkled with fennel greens.
