Whip up a flavor-packed pan-fried fish with a creamy mustard sauce in just 30 minutes!
Ingredients:
  • Green beans, to serve
  • Lemon wedges, to serve
  • 4 (150g each) firm white fish fillets
  • 30g butter
  • 20.00 ml plain flour
  • 82.50 gm dry white wine
  • 191.25 gm fish stock
  • 126.25 gm thickened cream
  • 23.40 gm wholegrain mustard
  • 20.00 ml chopped fresh dill
  • Steamed chat potatoes, to serve
Instructions:
  • In a large non-stick pan over medium-high heat, melt half of the butter. Season the fish with salt and pepper, then cook each side for 3 to 4 minutes until just cooked through. Transfer the fish to a plate and cover with foil.
  • Wipe the pan clean, then melt the remaining butter. Add flour and cook for 1 minute while stirring. Remove from heat and slowly whisk in wine until smooth. Add stock and simmer until thickened. Stir in cream and simmer for 2 minutes. Finally, mix in mustard, dill, salt, and pepper to season.
  • Drizzle the sauce over the fish and plate with potatoes, beans, and lemon wedges.
