Sicilian street food royalty: Crispy chickpea fritters, perfect for vegans, vegetarians, and gluten-free diets.
Ingredients:
  • 3 cups chickpea flour
  • salt to taste
  • 6 cups water
  • 1 tablespoon chopped fresh parsley, or to taste
  • ground black pepper to taste
  • 1 quart vegetable oil, or as needed
Instructions:
  • In a large saucepan over low heat, gently combine chickpea flour and salt. Slowly whisk in water bit by bit to achieve a smooth mixture, avoiding any clumps.
  • When the mixture turns smooth and creamy, raise the heat to medium and let it come to a boil. Lower the heat and simmer for 15 minutes, stirring constantly, until the mixture begins to pull away from the pan's edges.
  • Sprinkle parsley and a touch of pepper into the dish. Taste and season with salt as necessary.
  • Spread the chickpea mixture onto a greased baking sheet, ensuring it forms a uniform 1 1/2 inch thick layer. Chill in the refrigerator until firm, for at least 30 minutes.
  • Cut the chickpea mixture into 1 1/2 x 2-inch rectangles.
  • In a deep pot, heat vegetable oil to 250°F. Fry a few rectangles at a time until crispy, for 3 to 4 minutes. Drain on paper towels and serve hot.
