Siena specialty dessert with warm spices, perfect for pairing with espresso or Italian liqueur.
Ingredients:
125.00 ml plain flour
10.00 gm mixed spice
Pinch of white pepper
125g hazelnuts, roasted, blanched
115g almonds, roasted, blanched
250.00 ml dried figs, coarsely chopped
125.00 ml mixed peel
50g dark chocolate, coarsely chopped
107.50 gm caster sugar
178.75 gm honey
20.00 gm water
Instructions:
Preheat oven to 180°C. Line the base of a 20cm non-stick springform pan with baking paper. Sift flour, mixed spice, and white pepper into a bowl.
Mix hazelnuts, almonds, dried figs, mixed peel, and dark chocolate. Combine caster sugar, honey, and water in a saucepan over medium heat until sugar dissolves. Simmer until the mixture reaches 116°C on a sugar thermometer. Stir the sugar syrup into the flour mixture until well combined.
Pour the mixture into the prepared pan and level the top. Bake for 30 minutes, then allow it to cool. Sprinkle with icing sugar and slice into wedges.
