Whip up a quick and easy go-to meal for busy afternoons!
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 400g can diced tomatoes
  • 2 tsp chicken style stock powder
  • 62.50 ml dried macaroni pasta
  • 750g can four bean mix, drained, rinsed
  • 420g can mixed vegetables, drained
  • Basil pesto, to serve
  • Crusty bread, to serve
Instructions:
  • Begin by heating oil in a large saucepan over medium-high heat. Sauté onion and garlic until they are softened, which will take about 3 to 4 minutes. Next, stir in tomato paste, tomato, stock powder, and 4 1/2 cups of cold water. Cover the pan and bring the mixture to a boil. Then, add the pasta and cook uncovered for 10 minutes, or until the pasta reaches the desired tenderness.
  • Combine beans and colorful vegetables in the pot. Cook for 4 to 5 minutes until warm. Sprinkle with freshly ground pepper. Serve in bowls, top with a spoonful of flavorful pesto, and enjoy with some delicious bread on the side.
