Revamp stale bread with this delicious Italian panzanella salad.
Ingredients:
  • 4 slices day-old Italian-style bread, torn into 2cm pieces
  • 4 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 4 ripe tomatoes, coarsely chopped
  • 1 red onion, cut into thin wedges
  • 62.50 ml fresh basil leaves, coarsely torn
  • 36.40 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
Instructions:
  • In a serving bowl, mix together bread, cucumber, tomato, onion, and basil. Drizzle with oil and vinegar, sprinkle with salt and pepper, toss gently, and serve.
