Pappa's Anzac biscuits

Creating Anzac Day biscuits is a cherished tradition passed down from heroic grandfather on car trips.
Ingredients:
  • 150g (1 cup) plain flour
  • 90g (1 cup) rolled oats
  • 85g (1 cup) desiccated coconut
  • 100g (1/2 cup, firmly packed) brown sugar
  • 55g (1/4 cup) caster sugar
  • 125g butter, chopped
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 160C (140C fan forced) and line 2 baking trays with baking paper.
  • In a large bowl, mix together the flour, rolled oats, coconut, and combined sugars.
  • Combine the butter, golden syrup, and 2 tablespoons of water in a small saucepan over medium heat until the butter melts and the mixture is smooth. Mix in the bicarb, then stir into the flour mixture until fully combined.
  • Shape level tablespoonfuls of the dough into balls and arrange them on the prepared trays, spacing them 5cm apart. Gently press down to flatten until they are about 1cm thick. Bake for 15-20 minutes or until they turn golden, rotating the trays halfway through. Allow them to cool on the tray for 10 minutes before transferring to wire racks to cool completely.
