Win over your love with this delectable vegetarian pasta dish.
Ingredients:
  • 15g dried porcini mushrooms*
  • 8 garlic cloves, unpeeled
  • 62.50 ml grated parmesan
  • 30g unsalted butter
  • 50ml olive oil
  • 200g Swiss brown mushrooms, quartered
  • 300ml cream
  • 200g pappardelle pasta
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Place half of the porcini mushrooms in one small bowl and the garlic cloves in another. Pour 1/2 cup of boiling water over each and let soak for 15 minutes.
  • Next, place the remaining porcini mushrooms and Parmesan cheese in a food processor and blend until combined. Transfer the mixture to a bowl and set it aside.
  • Drain the garlic and remove cloves from their skins, discarding the skins.
  • In a frying pan over low heat, melt the butter in olive oil. Sauté garlic cloves covered for 10 minutes until golden and soft. Quickly cook Swiss brown mushrooms, then add soaked porcini and their liquid. Cook until liquid is absorbed, then stir in cream and let it gently simmer.
  • Boil the pasta in salted water as per package instructions until al dente. Drain the pasta and mix it with the mushrooms. Add parsley, then serve in bowls sprinkled with the porcini mixture.
