Paprika and lemon baked chicken

Delight your loved ones with this flavorful and easy chicken recipe.
Ingredients:
  • 9.20 gm olive oil
  • 8 large chicken drumsticks or thighs
  • 2 red onions, cut into wedges
  • 1 lemon, cut into wedges
  • 375ml chicken stock
  • 32.00 gm brown sugar
  • 10.00 gm smoked paprika
  • 3 garlic cloves, crushed
  • 62.50 ml fresh oregano sprigs
  • 1 long fresh red chilli, seeded, thinly sliced
  • Steamed white rice, to serve
Instructions:
  • Preheat the oven to 180°C. Heat oil in a flameproof roasting pan over medium heat, then add chicken and cook for 5 minutes until golden brown, turning occasionally.
  • Arrange onion and lemon wedges around the chicken in the pan. Mix chicken stock, sugar, paprika, and garlic in a jug, then drizzle over the chicken. Remove from heat, sprinkle with oregano and chili, then bake in a preheated oven for 30 minutes or until chicken is cooked through and sauce thickens slightly.
  • Take it out of the oven. Enjoy a taste and adjust the seasoning with salt and pepper. Distribute evenly onto serving plates. Serve right away with optional steamed rice.
