Create a crowd-pleasing dinner with this traditional paprika chicken recipe.
Ingredients:
  • 20.00 gm butter
  • 8 chicken thigh fillets, skin on
  • 2 brown onions, chopped
  • 2 red capsicums, deseeded, cut into 2cm pieces
  • 20.00 gm paprika
  • 2.50 gm ground ginger
  • 2.50 gm ground nutmeg
  • 20.00 ml dried basil
  • 339.15 gm chicken style liquid stock
  • 250.00 gm white wine
  • 48.80 gm Worcestershire sauce
  • 62.50 ml plain yoghurt
  • Steamed brown rice, to serve
  • Green beans, to serve
Instructions:
  • In a heavy-based saucepan over high heat, heat oil and butter. Add chicken and cook until golden on each side, about 3 to 4 minutes. Transfer to a plate.
  • Sauté onion and capsicum until soft, around 4 to 5 minutes. Stir in paprika, ginger, nutmeg, basil, stock, wine, and Worcestershire sauce. Add chicken back to the pan and bring to a boil. Reduce heat and simmer covered for 30 minutes.
  • Uncover and simmer for an additional 10 minutes until the sauce thickens slightly and the chicken is fully cooked.
  • Gently fold in yogurt and heat for 5 minutes without boiling, or until warmed through. Plate the dish and serve with rice and green beans.
