Ingredients:
  • 40.00 ml plain flour
  • Salt & freshly ground pepper
  • 650g diced veal
  • 18.20 gm light olive oil
  • 1 red onion, halved, sliced
  • 2 garlic cloves, chopped
  • 20.00 gm smoked paprika
  • 250g button mushrooms, halved
  • 1 red capsicum, cut into 2cm pieces
  • 125ml chicken stock
  • 125.00 ml fresh continental parsley leaves
  • San Remo pasta bows, to serve
Instructions:
  • Season the flour with a pinch of salt and pepper, then place it in a plastic bag. Add the veal to the bag and shake well to ensure even coating. In a large saucepan over medium-high heat, heat oil. Add the veal and cook for about 3 minutes until nicely browned.
  • Lower the heat to medium-low and sauté the onion and garlic until the onion is soft. Stir in the paprika, mushrooms, and capsicum for 1 minute. Pour in the stock, then reduce heat to low, cover, and simmer for 10 minutes until the meat is tender.
  • Cook the pasta in boiling water until it is "al dente" according to the packet instructions.
  • Serve the paprika veal over the pasta, garnished with fresh parsley leaves.
