Elevate your BBQ with a sweet pineapple, asparagus, and spring onion salad, a perfect match for flavorful spiced lamb chops.
Ingredients:
  • 8 Lamb Loin Chops
  • 7.50 gm ground paprika
  • Olive oil spray
  • 1/2 small pineapple, peeled, halved, thinly sliced
  • 1 bunch asparagus, thinly sliced lengthways
  • 2 spring onions, thinly sliced
  • 120g Baby Rocket
  • 36.40 gm olive oil
  • 21.00 gm lemon juice
Instructions:
  • Season lamb generously with flavorful paprika and give it a light coating of oil. Preheat barbecue grill or chargrill to medium-high heat. Grill lamb for 2-3 minutes on each side for a perfect medium cook, or adjust cooking time to your desired doneness. Remove lamb from grill and place on a plate, covering it with foil. Allow it to rest for 5 minutes before serving.
  • Spray pineapple with oil and grill for 3 minutes on each side until charred. Combine grilled pineapple with asparagus, spring onion, and rocket in a large bowl. In a small bowl, whisk together oil, lemon juice, and seasonings. Drizzle over the salad before serving.
  • Divide the salad and lamb onto plates and serve right away.
