Elevate your meal with crispy crumbs and flavorful mashed potatoes for a gourmet touch!
Ingredients:
  • 3 medium (about 600g) potatoes, peeled, coarsely chopped
  • 80ml (1/3 cup) milk
  • 1 garlic clove, crushed
  • 1 tsp finely grated lemon rind
  • 2 slices white bread, crusts removed, coarsely chopped
  • 20g butter
  • 2 tsp chopped fresh continental parsley
  • Olive oil spray
  • 500g white fish fillets
  • Lemon wedges, to serve
Instructions:
  • Boil potatoes until tender, then drain and return to the pan. Mash with milk until smooth. Season with salt and pepper. Stir in garlic and lemon zest.
  • Place the bread in a food processor and pulse until finely chopped. In a large frying pan, melt the butter over low heat. Add the breadcrumbs and stir often for about 10 minutes until crispy and golden. Remove from heat and let it cool slightly before mixing in the parsley.
  • 1. Preheat a spacious non-stick pan over medium heat and spritz with olive oil. 2. Cook the fish for 5 minutes on each side until it easily flakes with a fork. 3. Plate the mash and fish, then top with breadcrumbs. 4. Serve with lemon wedges.
