Parsnip and apple puree

Elevate comfort with velvety parsnip puree, a perfect match for tender pork.
Ingredients:
  • 4 (about 700g) parsnips
  • 1 Golden Delight potato, peeled, coarsely chopped
  • 1 Granny Smith apple, peeled, coarsely chopped
  • 20g butter, chopped
  • 80ml (1/3 cup) pouring cream, warmed
Instructions:
  • Peel and roughly chop parsnips, then place them in a saucepan and cover with cold water. Season and bring to a boil over medium-high heat. Simmer for 6 minutes. Add potato and apple, then simmer for 20 more minutes until tender. Drain before serving.
  • Add the mixture and chopped butter to a food processor and blend until smooth. While the processor is running, slowly pour in the warmed pouring cream until the mixture is smooth. Season to taste and serve alongside pork.
