Buttery parsnip and carrot mash with chives - perfect side for any roasted dish. Deliciously simple puree.
Ingredients:
  • 8 parsnips, peeled and cut into 2 inch pieces
  • 2 carrots, peeled and cut into 2-inch pieces
  • 0.25 cup snipped chives
  • 6 tablespoons butter, divided
  • sea salt and freshly ground black pepper to taste
Instructions:
  • In a large pot, combine parsnips and carrots, covering them with salted water. Bring to a boil over high heat, then simmer covered until tender, for 15 to 20 minutes. Drain the vegetables and return them to the pot. Stir in chives and 3 tablespoons of butter over low heat.
  • Use an immersion blender to blend the mixture until smooth, adding 3 tablespoons of butter. Season with salt and pepper to taste.
