Party Barbecued Shrimp

Tangy lemon and soy marinated grilled pink shrimp - a crowd-pleasing fall party appetizer.
Ingredients:
  • 2 lb uncooked large shrimp, peeled (with tail shells left on), deveined
  • 1/2 cup vegetable oil
  • 1/2 cup fresh lemon juice
  • 1/4 cup soy sauce
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons finely chopped onion
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • Place the shrimp in a shallow glass or plastic dish. In a small bowl, combine the rest of the ingredients to make the marinade. Pour the marinade over the shrimp. Cover and refrigerate for 2 to 3 hours, remembering to turn the shrimp occasionally.
  • Preheat the grill. Remove shrimp from the marinade and discard the marinade. Place the shrimp in a grill basket. Grill over medium heat for 6 to 8 minutes, flipping once, until the shrimp turn pink.
