Party squid & harissa mayo

Crispy squid with tangy harissa mayo – a crowd-pleasing snack.
Ingredients:
  • 3 lemons
  • 3 sprigs of flowering oregano
  • 2 tablespoons fennel seeds
  • freshly ground white pepper
  • 300 g plain flour
  • 12 whole medium squid prepared, with tentacles, from sustainable sources
  • vegetable oil for deep-frying
  • a small bunch of fresh flat-leaf parsley
  • 1 clove of garlic
  • 3 heaped tablespoons Hellmann's Mayonnaise
  • 4 teaspoons harissa paste
  • 1½ teaspoons rose water
Instructions:
  • For the harissa mayo, crush garlic with sea salt, mix with mayo. Add 2 tsp harissa, lemon zest and juice. Adjust with more lemon juice if needed. Drizzle with rosewater and harissa. Blend oregano flowers, fennel, salt, and white pepper to a powder. Mix with flour. Coat squid in flour mixture. Fry squid in hot oil until golden and cooked through. Drain on paper towels. Fry parsley until crisp. Fry lemon slices until crisp. Top squid with crispy parsley and lemon slices. Serve with lemon wedges and harissa mayo.
