Passionfruit & lemon polenta biscuits

Flavorful gluten-free polenta biscuits bursting with passionfruit and lemon essence.
Instructions:
  • Preheat your oven to 180°C /160°C fan-forced. Cream together dairy-free spread, lemon rind, and icing sugar until smooth. Mix in polenta and flour to form a soft dough. Shape the dough into a 30cm log and slice into 1cm wide pieces, or roll into small balls using generous teaspoons. Place the biscuits on a baking paper-lined tray, then gently flatten if necessary.
  • Bake for 15-18 minutes until firm. Allow to cool on tray for 5 minutes, then transfer to a rack to cool completely. Spread or dollop icing over the top and let it set until firm.
  • Combine the passionfruit pulp and water with icing sugar until a smooth icing forms.
