Satisfying Pasta e Fagioli with beans and hearty broth, reminiscent of Toronto's Little Italy.
Ingredients:
  • 1 cup ditalini pasta
  • 3 tablespoons olive oil
  • 1 onion, diced
  • 4 slices bacon, diced
  • 1 quart chicken broth
  • 1 (15 ounce) can Romano beans, drained
  • 0.25 cup tomato paste
  • 1 pinch crushed dried chile pepper
  • 2 tablespoons chopped fresh parsley
  • 4 teaspoons grated Romano cheese, or to taste
Instructions:
  • 1. In a large pot, bring salted water to a vigorous boil. Add ditalini and let it return to a boil. Cook the pasta uncovered, stirring occasionally, until al dente, which should take around 6 minutes. Drain the pasta.
  • In a large pot over medium heat, warm up olive oil. Add onion and bacon, saute until onions are soft for about 5 minutes. Stir in garlic and cook just until fragrant over medium-low heat, about 1 minute.
  • Combine chicken broth, beans, tomato paste, and chile pepper with the savory onion-bacon mix, and simmer for 10 minutes until heated through. Then stir in ditalini and parsley, season with salt and pepper, and finish with a sprinkle of Romano cheese before serving.
