Pasta with lemon and goat's cheese

Indulge in creamy goat cheese pasta for a gourmet experience.
Ingredients:
  • 400g spiral pasta
  • 36.40 gm olive oil
  • 1/4 tsp dried chilli flakes
  • Grated zest of 2 lemons
  • 80ml lemon juice
  • 300g matured goat's cheese*
  • 100g rocket leaves
  • 60.00 ml grated parmesan
Instructions:
  • Boil pasta in salted water until al dente. In a deep frypan over medium heat, warm oil. Sauté garlic for 30 seconds. Stir in chilli, lemon zest, and juice. Drain pasta and combine with 1/4 cup (125ml) cooking water in frypan. Mix well, then cover and remove from heat.
  • Preheat the grill to high. Slice the cheese into 4 rounds, place on a lightly greased baking tray, and grill for 2-3 minutes until bubbly. Mix parmesan and rocket with pasta, season to taste. Divide the pasta among 4 bowls, top each with a grilled goat's cheese slice, and sprinkle with freshly ground black pepper before serving.
