Innovative pasta with turkey sausage, roasted squash, balsamic, and sage.
Ingredients:
  • 2 tablespoons olive oil
  • 1.6666666269302 cups cubed butternut squash
  • 1 large onion, chopped
  • salt and pepper to taste
  • 8 ounces uncooked penne pasta
  • 0.5 pound turkey sausage
  • 0.25 cup heavy cream
  • 2 teaspoons dried sage
  • 3 cloves garlic, minced
  • 3.5 tablespoons balsamic vinegar
Instructions:
  • - Preheat your oven to 350 degrees F (175 degrees C). - Prepare a roasting pan by coating it with olive oil. - Arrange the squash and onion in the pan, then generously season with salt and pepper. - Roast in the oven for 30 minutes or until the squash is tender.
  • Bring a large pot of salted water to a boil. Cook penne pasta for 8 to 10 minutes until al dente, then drain.
  • Brown turkey sausage in a large skillet over medium heat. Add cooked squash, onion, and pasta to the skillet. Slowly pour in cream and season with sage. Heat through, then mix in garlic. Transfer to a large bowl, toss with balsamic vinegar, and serve.
