Whip up a quick and elegant pasta with zucchini flowers, pecorino, and tomatoes in just 15 minutes!
Ingredients:
  • 12 zucchini flowers, with zucchini attached
  • 330g penne rigate
  • 180ml olive oil
  • 2 cloves garlic, crushed
  • 16 grape tomatoes, halved
  • 80g pecorino cheese or parmesan, grated
  • 250.00 ml fresh basil leaves
  • 250.00 ml purple basil leaves
Instructions:
  • Separate zucchini flowers and delicately remove the yellow stamens with fingertips. Tear flowers into petals and set aside. Diagonally slice zucchini into 5mm-thick pieces.
  • Boil pasta in salty water for 6 minutes until al dente. In another pot, heat oil over high heat. Quickly sauté garlic and zucchini until fragrant and bright green. Add tomatoes and stir briefly. Drain pasta, combine with zucchini mix, and toss together.
  • Combine the pecorino, torn zucchini flowers, and basil leaves with the pasta. Mix well, season with salt and pepper to taste, and serve.
