Dominican Republic classic dish, versatile as main or side. Serve with salad for a complete meal.
Ingredients:
  • cooking spray
  • 10 plantains, peeled and broken into chunks
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 0.25 cup butter
  • 1 tablespoon canola oil
  • 1 pound ground beef
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 0.5 cup tomato sauce
  • 1 teaspoon crushed garlic
  • 0.5 cube chicken bouillon
  • 0.5 pound shredded Cheddar cheese
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously coat a baking dish with cooking spray.
  • In a large pot, combine plantains and salt, covering them with water. Boil until plantains darken. Add 1 cup water, bring to a boil, and simmer for about 15 minutes until tender. Drain before serving.
  • Combine the plantains, milk, and butter in the pot and mash until smooth.
  • In a large skillet, heat oil over medium heat. Cook and stir ground beef, onion, bell pepper, tomato sauce, garlic, and chicken bouillon until beef is browned and cooked through, about 10-12 minutes. Add water if the mixture becomes dry.
  • Layer half of the mashed plantains on the bottom of the baking dish. Pour the meat mixture on top, then add a layer of Cheddar cheese. Finish by spreading the rest of the mashed plantains over the cheese.
  • Simply bake until the plantains are golden and the filling is bubbling, about 10 minutes in the preheated oven.
