Mouthwatering Mediterranean lamb delight!
Ingredients:
  • 40g butter
  • 40.00 ml plain flour
  • 386.25 gm milk
  • 250.00 ml finely grated parmesan cheese
  • 250g penne rigate
  • 1 medium brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 500g lamb mince
  • 400g can diced tomatoes
  • 1 cinnamon stick
  • 125.00 ml fresh flat-leaf parsley leaves
Instructions:
  • Heat oil in a large saucepan over high heat. Saute onion and garlic until onion is softened, about 3-4 minutes. Stir in tomato paste and cook for 1 minute. Add the mince and cook, breaking it up with a wooden spoon, until browned, 6-8 minutes.
  • Combine tomatoes, a hint of cinnamon, and season generously with salt and pepper. Bring to a gentle boil, then lower the heat and simmer for 20 to 25 minutes until the sauce is wonderfully thick. Take off the heat, fish out and discard the cinnamon stick, and stir in fresh parsley before serving.
  • In a saucepan over medium-high heat, melt butter until bubbling. Add flour and cook for 1 minute, stirring constantly. Slowly pour in the milk and bring to a boil. Reduce heat to medium and stir for 5 minutes until thickened. Remove from heat and mix in half of the cheese. Season with salt and pepper.
  • Preheat the oven to 200°C/180°C fan-forced. Boil pasta in a large pot of salted water according to package instructions until tender. Drain and mix with meat sauce. Transfer to an 8 cup-capacity ovenproof dish. Cover with cheese sauce and remaining cheese. Bake for 25 minutes until golden. Serve.
