Delicious Greek pasta and mince bake topped with golden cheese, great for cozy winter dinners.
Ingredients:
18.20 gm olive oil
1brown onion, halved, finely chopped
3garliccloves, crushed
1kg lamb mince
1 x 800g candiced tomatoes
44.40 gm tomato paste
2.50 gm ground cinnamon
2dried bay leaves
82.50 ml coarsely choppedfresh continental parsley
300g dried macaroni pasta
40.00 ml dried (packaged) breadcrumbs
50g butter
40g (1/4 cup) plain flour
625ml (2 1/2 cups) milk
70g (1 cup) coarsely gratedkefalotyri cheese
Instructions:
Preheat the oven to 180°C. In a large saucepan over medium-high heat, heat the oil. Sauté the onion and garlic until softened, about 3 minutes. Brown the mince for about 5 minutes. Stir in the tomato, tomato paste, cinnamon, and bay leaves. Bring to a boil and simmer for 15 minutes until the sauce thickens. Remove from heat and stir in the parsley.
To prepare the sauce, melt butter in a saucepan over medium heat until it foams. Add flour and cook, stirring, for 1 minute until it bubbles. Slowly pour in the milk, stirring to combine. Cook and stir for 5 minutes until the sauce thickens, then mix in half of the kefalotyri cheese.
Cook the pasta in a saucepan of salted boiling water until al dente following packet instructions. Drain and divide among six 625ml (2 1/2-cup) capacity ovenproof dishes. Top with mince mixture and pour over cheese sauce. Sprinkle the breadcrumb mixture over the top. Bake for 15-20 minutes until golden. Serve hot.
