A popular spicy green chili soup loved by all, best served with buttered tortillas, cheese, and sour cream.
Ingredients:
  • 1 tablespoon butter
  • 0.5 cup finely diced onion
  • 1 teaspoon minced garlic
  • 0.5 cup chopped fresh green chile peppers
  • 1 (5 ounce) can chunk chicken
  • 1.5 teaspoons ground cumin
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1.25 cups half-and-half cream
  • 1 cup shredded Cheddar cheese
  • 0.25 cup sour cream
Instructions:
  • In a large saucepan over medium-high heat, melt butter and sauté onion until translucent for 3 to 4 minutes. Add garlic, green chiles, chicken, and cumin. Cook for about 1 minute to blend flavors. Stir in cream of chicken soup and half-and-half, then cook until heated through for about 5 minutes.
  • Serve steaming soup in individual bowls, generously sprinkle cheese on top, and finish with a dollop of tangy sour cream.
