Patrick's Arrabiata Sauce

Budget-friendly spicy pasta sauce with bold flavors and smooth consistency - yields a large batch with a little time investment.
Ingredients:
  • 1 cup olive oil
  • 0.25 cup unsalted light butter
  • 6 large cloves garlic, thinly sliced
  • 5 yellow onions, sliced 1/4-inch thick
  • 1 cup red cooking wine
  • 15 Italian plum tomatoes, coarsely chopped
  • 20 leaves fresh basil
  • 5 tablespoons double concentrated tomato paste
  • 1 tablespoon smoked paprika
  • 1 tablespoon white sugar
  • 2 teaspoons cayenne pepper
  • 2 teaspoons salt, or to taste
Instructions:
  • In a large pot, heat olive oil, butter, and garlic over high heat until garlic sizzles, about 2 minutes. Reduce heat to medium, add onions, and cook until translucent, stirring occasionally for 2 to 3 minutes. Pour in wine and simmer until partially evaporated, around 10 minutes.
  • Add the tomatoes and basil to the food processor and pulse until the tomatoes are chunky. Transfer the mixture to the onions and cook, stirring occasionally, until the sauce deepens to a rich red color, approximately 40 minutes. Remove from heat.
  • In batches, blend the sauce in a food processor until smooth. Stir in tomato paste, smoked paprika, sugar, and cayenne pepper into the mixture. Season with salt to taste.
