Creamy blueberry pie with warm cream cheese, fresh blueberries, and hot blueberry filling, chilled for a delectable treat.
Ingredients:
  • 1 refrigerated crust for a 9-inch pie
  • 0.5 (8 ounce) package cream cheese
  • 2.5 cups fresh blueberries
  • 3 tablespoons cornstarch
  • 1 cup cold water
  • 1 pinch lemon zest
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Gently press the pie crust dough into the pie pan, then create small holes in the dough using a fork.
  • Bake in the oven until golden brown, for approximately 15 minutes. Allow it to cool down to room temperature before serving.
  • Place cream cheese in a microwave-safe bowl and microwave on High for about 20 seconds to soften.
  • Evenly spread the softened cream cheese on the cooled crust.
  • Arrange a generous 2 1/2 cups of fresh blueberries over the luscious cream cheese layer.
  • In a small bowl, stir together cornstarch and cold water until fully dissolved.
  • Combine the cornstarch mixture, 2 1/2 cups blueberries, sugar, and lemon zest in a saucepan over medium heat, cooking until thickened, for 5 to 10 minutes.
  • Spread the thickened blueberry mixture over the fresh blueberries in the pie crust evenly.
  • Chill the pie in the refrigerator until firm, for at least 1 hour.
