Transport yourself to the south of France with these divine French mussels, best enjoyed with a glass of chilled wine and crusty bread.
Ingredients:
  • 50 fresh mussels, scrubbed and debearded
  • 2 tablespoons extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 cup white wine
  • 2 tablespoons margarine or butter
  • 3 green onions, chopped
  • 1 bunch fresh parsley, chopped
  • 3 roma (plum) tomatoes, chopped
  • salt and pepper to taste
Instructions:
  • Submerge mussels in a generous amount of cold water in a large bowl and soak for approximately 20 minutes to clean off any dirt or sand.
  • In a large stockpot, warm olive oil over gentle heat. Cook garlic for a minute without browning. Mix in green onion and tomatoes, cooking until nearly soft. Add white wine, parsley, and butter. Bring to boil and simmer until liquid reduces by half, approximately 15 minutes. Season with salt and pepper.
  • Place the mussels in the pot, cover, and let them cook until the shells open, approximately 10 minutes. Then, transfer the mussels and sauce to a large serving bowl, removing any unopened shells. Enjoy your meal!
