Generational beef stew with potatoes, carrots, and love. Perfect with salad and crusty bread.
Ingredients:
2tablespoons vegetable oil
2pounds lean beef, cut into 1-1/2 inch cubes
2tablespoons all-purpose flour
1pinchsalt
1pinchgroundblack pepper
1bay leaf
1 (8 ounce) cantomato sauce
2potatoes, peeled and cut into large chunks
4carrots, cut into large chunks
3stalkscelery, thickly sliced
Instructions:
In a large pot over medium heat, warm the oil. In a bowl, coat the meat with flour by tossing it. Add the coated meat to the pot, season with salt and pepper, and brown evenly on all sides.
1. Fill a pot with water to cover the meat, then add onion, bay leaf, and tomato sauce. Bring to a boil, then reduce heat, cover, and simmer for an hour, or until the meat is tender.
Add the potatoes, carrots, and celery to the mixture and simmer gently for 45 minutes until vegetables are soft. Before serving, don't forget to discard the bay leaf.
