Decadent pineapple-coconut-pecan pie with luscious homemade custard filling.
Ingredients:
  • 4 large eggs, beaten
  • 0.5 cup butter, melted
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon all-purpose flour
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 (9 inch) prepared pie crust
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • In a large bowl, whisk together sugar, eggs, butter, cornmeal, flour, and vanilla extract until silky. Gently fold in pineapple, pecans, and coconut. Transfer the filling into the pie crust.
  • Place your pie in the oven, already warmed up, and bake until the center is almost set, for about 50 to 60 minutes.
