Try Vicki's make-ahead Christmas hit recipe - a perfect festive dish to prepare in advance for the holidays.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 (4 pound) beef chuck roast
  • 1 cup chili sauce
  • 0.5 cup water
  • 0.5 cup white vinegar
  • 1 tablespoon chili powder
  • salt and pepper to taste
  • 1 teaspoon garlic powder, or to taste
  • 2 teaspoons white sugar
Instructions:
  • In a large Dutch oven over medium-high heat, heat vegetable oil until shimmering. Add the roast and sear until golden brown on all sides.
  • Lower the heat to medium-low and add chili sauce, water, and vinegar. Season with chili powder, salt, pepper, garlic powder, and white sugar. Let it simmer over medium-low heat for 3 hours until the meat is fork-tender. Take out the beef, refrigerate it overnight along with the reserved sauce.
  • Slice or shred the beef, then place it in a large pot on the stove along with the sauce. Heat thoroughly and enjoy on its own or in your preferred sandwich buns.
