Elevate your Christmas feast with this quick and delectable side dish.
Ingredients:
  • 400g frozen peas
  • 200g sugar snap peas
  • 200g snow peas
  • 150g baby spinach leaves
  • 1 bunch mint, leaves picked
  • 1 red onion, thinly sliced
  • 23.40 gm dijon mustard
  • 100ml extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 1 garlic clove, finely chopped
  • 5.00 gm caster sugar
Instructions:
  • Boil peas in salted water for 2-3 minutes until tender. Then, cool them in cold water and drain.
  • Combine dressing ingredients in a bowl, then mix with peas, spinach, mint, and onion before serving.
