Whip up tasty high-fiber pea and chickpea falafels with garlic feta cream for a satisfying vegetarian meal.
Ingredients:
  • 250.00 ml frozen peas
  • 2 x 400g cans chickpeas, drained, rinsed
  • 1 brown onion, roughly chopped
  • 62.50 ml fresh flat-leaf parsley leaves
  • 1 garlic clove, quartered
  • 48.00 gm tahini
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 165.00 ml plain flour
  • 0.63 gm bicarbonate of soda
  • 24.00 gm sesame seeds
  • Extra virgin olive oil, for shallow-frying
  • 4 warmed small pita bread, to serve
  • Salad leaves, to serve
  • Sliced red radish, to serve
  • Fresh mint leaves, to serve
  • Lemon wedges, to serve
  • 200g fetta, quartered
  • 2 garlic cloves, crushed
  • 65.63 gm lemon juice
  • 18.20 gm extra virgin olive oil, plus extra to drizzle
Instructions:
  • Combine peas, chickpeas, onion, parsley, garlic, tahini, cumin, and coriander in a food processor until just mixed. Add flour and process until almost smooth. Chill in a covered bowl in the refrigerator for 15 minutes.
  • For the whipped garlic feta, combine feta cheese, garlic, lemon juice, and oil in a small food processor. Blend until smooth and well combined. Season generously with pepper, then transfer to a serving bowl and drizzle with extra oil.
  • Incorporate bicarbonate of soda into the falafel mixture. Shape 2 level tablespoons of the mixture into rough ovals, slightly flattening them with damp hands (mixture will be soft). Sprinkle sesame seeds on one side of the falafels and place them on a plate.
  • Pour enough oil into a large frying pan to reach 1cm up the side. Warm over medium heat. Cook falafel in batches for 1 to 2 minutes per side until golden brown and fully cooked. Place on paper towel to drain.
  • Arrange the falafel on a plate with whipped feta, pita bread, salad leaves, radish, mint, and lemon wedges, then drizzle with extra oil.
