Delicious, low-calorie lunch bursting with fresh flavors - a healthy food lover's dream!
Ingredients:
  • 300g (2 cups) frozen peas
  • 2 eggs
  • 80ml (1 ⁄3 cup) unsweetened almond milk
  • 55g (1 ⁄3 cup) wholemeal spelt flour
  • 100g baby spinach
  • 75g feta, crumbled
  • 40.00 ml chopped fresh mint leaves
  • 2 tsp finely grated lemon rind
  • 1 avocado
  • 42.00 gm fresh lemon juice
  • 40.00 ml natural yoghurt
  • 4 radishes, sliced
  • Lemon wedges, to serve
Instructions:
  • Cook peas until just tender by boiling, steaming, or microwaving. Then, cool them under cold running water, drain, and coarsely mash in a bowl.
  • In a large bowl, whisk together eggs, milk, and flour until smooth. Chop half of the spinach and add it to the mixture along with peas, feta, mint, and lemon rind. Stir everything together until well combined.
  • 1. Spray a large non-stick frying pan with oil and heat over medium-high heat. 2. Spoon 2 tablespoonfuls of fritter mixture into the pan and shape into one fritter. Repeat to make one more. 3. Cook each fritter for 2 minutes on each side until golden and cooked through. 4. Repeat the process with the rest of the fritter mixture to yield a total of 8 delicious fritters.
  • Combine ripe avocado, fresh lemon juice, and creamy yogurt in a food processor. Blend until velvety smooth, then season to your liking.
  • Plate fritters, the rest of the spinach, and radish among serving plates. Season to taste. Drizzle with avocado dressing and lemon wedges.
