Juicy peach scones, ideal for a delightful summer snack with coffee or tea.
Ingredients:
  • 2 cups all-purpose flour
  • 6 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cardamom
  • 0.25 teaspoon baking soda
  • 1 pinch ground nutmeg
  • 1 stick unsalted butter, frozen
  • 0.5 cup heavy cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced fresh peaches
  • 2 tablespoons turbinado sugar
Instructions:
  • Prepare all your ingredients. Preheat the oven to a piping hot 400 degrees F (200 degrees C) and line a baking sheet with a silicone mat or parchment paper.
  • Combine the flour, sugar, baking powder, cinnamon, salt, cardamom, baking soda, and nutmeg in a large bowl.
  • Shred 1/3 of the butter using a box grater. Gently mix with your fingertips until coated with flour. Repeat the process two more times with the rest of the butter.
  • Combine cream, egg, and vanilla extract in a small bowl, using a fork to blend them together. Pour the mixture over the flour-butter mixture.
  • Use a fork to combine the ingredients until a dough forms, then delicately incorporate the peach.
  • On a lightly floured surface, gently shape the dough into a 9-inch-long rectangle that is about 1 inch thick. Sprinkle turbinado sugar on top and press gently to make it stick.
  • Using a sharp knife, cut the mixture into 8 triangles and place them on the baking sheet.
  • Bake in the oven until golden, approximately 18 minutes. Then, place the baking sheet on a wire rack to cool.
