Sumptuous peach and pecan bread with a touch of cinnamon, ideal for brunch or summer gatherings.
Ingredients:
  • 2.5 cups pureed peaches
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon almond extract
  • 1.25 cups chopped toasted pecans
Instructions:
  • Heat your oven to 325 degrees F (165 degrees C) and generously grease a 5x9-inch loaf pan.
  • In a large bowl, cream together sugar and butter using an electric mixer until creamy. Mix in eggs one by one until fluffy. Gently fold in peach puree. Add flour, baking soda, baking powder, cinnamon, salt, and almond extract, then mix until combined. Finally, fold in pecans and pour the batter into the loaf pan.
  • Bake in the preheated oven for 50-60 minutes until a toothpick inserted in the center comes out clean. Allow the bread to cool in the loaf pan for 10 minutes, then transfer to a wire rack to cool completely.
