Ingredients:
  • 200g plain yoghurt
  • 65.00 gm crunchy peanut butter
  • 1 garlic clove, crushed
  • 1 tsp grated fresh ginger
  • 2 fresh small red chillies, or to taste, chopped
  • 2.50 gm ground cumin
  • 500g pork scotch fillet, cut into 2cm cubes
  • 1 Lebanese cucumber, coarsely grated
  • 4 naan bread, warmed
Instructions:
  • In a bowl, mix together half of the yogurt with peanut butter, garlic, ginger, chili, and cumin until well combined. Add the pork and ensure it is evenly coated in the marinade. Let it marinate for 5 minutes.
  • Combine the rest of the yogurt with the cucumber and set it aside.
  • Skewer the pork onto 8 bamboo sticks and grill on high heat for about 6 minutes until cooked through, turning occasionally.
  • Accompany the pork with a refreshing cucumber and yogurt mixture, served alongside warm naan bread.
