Ingredients:
  • 210.00 gm vanilla ice-cream, softened
  • 2 x 50g chocolate honeycomb bars, chopped
  • 65.00 gm crunchy peanut butter
  • 210.00 gm chocolate ice-cream
Instructions:
  • Place plastic wrap in 4 of the 6 holes of a 3/4 cup-capacity Texas muffin pan.
  • In a large bowl, combine vanilla ice-cream and three-quarters of the honeycomb. Spoon the ice-cream mixture into the prepared pan holes, ensuring the tops are smooth. Freeze for 1 hour or until firm.
  • Soften the chocolate ice-cream, then place the peanut butter in a large bowl and stir to soften it. Mix in half of the chocolate ice-cream, then add the rest and combine. Spread this mixture over the vanilla ice-cream, smooth the top, cover, and freeze overnight until firm.
  • Take ice-creams out of the pan holes and discard the plastic wrap. Top the ice-creams with the remaining honeycomb before serving.
