Peanut butter chocolate buns with chocolate glaze

Fluffy bread with peanut butter and melted chocolate filling.
Ingredients:
  • 125ml (1/2 cup) milk, warmed
  • 55g (1/4 cup) caster sugar
  • 2 tsp (7g/1 sachet) dried yeast
  • 2 eggs, lightly whisked
  • 340g (2 1/4 cups) plain bread flour
  • 30g (1/4 cup) cocoa powder
  • 0.60 gm salt
  • 120g unsalted butter, at room temperature, cut into 2cm pieces
  • 70g (1/4 cup) crunchy peanut butter
  • 8 pieces (about 70g) 70% cocoa dark chocolate
  • 40.00 gm caster sugar
  • 40.00 gm cold water
  • 27.00 gm maple syrup
  • 10.00 gm Cocoa Powder, sifted
  • Pinch of salt
  • 25g 70% cocoa dark chocolate, finely chopped
Instructions:
  • Combine milk, 1 tablespoon of sugar, and yeast in a jug. Let it sit for 10 minutes until frothy, then whisk in the egg.
  • Combine flour, cocoa, salt, and remaining sugar in a food processor until mixed. Pour in yeast mixture and process until dough forms. Gradually add butter pieces until a soft sticky dough forms. If not using a food processor, mix flour and yeast in a bowl until combined. Knead in butter pieces gradually on a floured surface until dough forms, adding more flour if needed to prevent sticking.
  • Transfer the dough to a floured surface and knead for 3-4 minutes until smooth. Put the dough in a greased bowl, brush with melted butter, cover, and let it rest in a warm, draft-free spot for 1 hour or until it doubles in size.
  • Preheat the oven to 180C. Punch down the dough and divide it into 8 portions. Flatten each portion into 10cm discs. Place 1 1/2 teaspoons of peanut butter in the center of each disc and top with a piece of chocolate. Fold the sides to enclose the filling, pinching to seal. Arrange the filled dough balls seam-side down in a flower shape on a lined baking tray, ensuring they touch each other slightly.
  • Place a cozy blanket of plastic wrap over the dough and let it rest in a cozy spot for 40 minutes until it puffs up. Bake for 20-25 minutes until golden and tap to hear a hollow sound. Let them cool for 30 minutes before digging in.
  • For the chocolate glaze, combine sugar, water, maple syrup, cocoa powder, and salt in a small saucepan over medium heat. Whisk for 2 minutes until sugar dissolves. Bring to a boil, then simmer on low heat for 4 minutes until slightly thickened. Remove from heat and stir in chocolate until melted and smooth. Let sit for 15-20 minutes to thicken.
  • Drizzle the rich chocolate glaze over the buns, allowing them to rest for 10 minutes to achieve a perfect, delectable finish.
