Indulgent banana bread with chocolate chips and peanut butter - perfect for a festive Easter brunch treat!
Ingredients:
  • cooking spray
  • 1 cup whole wheat flour
  • 0.5 teaspoon baking soda
  • 2 ripe bananas, mashed
  • 0.33333334326744 cup unsweetened crunchy peanut butter
  • 0.25 cup plain fat-free yogurt
  • 1 tablespoon canola oil
  • 0.75 cup semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan with cooking spray for easy release.
  • In a large bowl, combine whole wheat flour, baking powder, baking soda, and salt, whisking until thoroughly mixed.
  • Combine mashed bananas, peanut butter, brown sugar, yogurt, egg, and canola oil in a separate bowl, stirring until fully mixed.
  • Combine the banana mixture with the dry ingredients until fully mixed; fold in the chocolate chips.
  • Gently transfer the batter into the loaf pan.
  • Bake in the preheated oven for 40-50 minutes, or until the loaf is lightly browned at the edges and a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan on a rack for 15 minutes, then transfer to the rack to finish cooling. Slice after the bread has fully cooled.
