Peanutty Chicken Kabobs

30-minute grilled chicken kabobs served with a savory sauce and topped with peanuts.
Ingredients:
  • 1 pound boneless, skinless chicken breast halves or thighs, cut into 1 1/2-inch pieces
  • Chopped peanuts, if desired
  • 1/3 cup crunchy peanut butter
  • 1/3 cup boiling water
  • 1 tablespoon grated gingerroot or 1 teaspoon ground ginger
  • 1 tablespoon lemon juice
  • 1/8 teaspoon crushed red pepper
Instructions:
  • Prepare the grill by brushing the rack with vegetable oil and heating it for direct heat. Thread the chicken pieces onto four metal skewers, ensuring there is space between each piece.
  • Prepare a flavorful Spicy Peanut Sauce. Set aside 1/2 cup for serving with cooked kabobs. Use the remaining sauce to generously brush the chicken.
  • Grill kabobs over medium heat, covered, for about 15 minutes, turning and brushing with sauce until chicken is fully cooked. Serve with extra sauce and peanuts on the side.
