Pear and watercress complement savory pork and tangy blue cheese perfectly.
Ingredients:
  • 3 pork loin medallions
  • 20.00 ml white balsamic vinegar
  • 1 bunch watercress, leaves picked
  • 3 Packham pears, cored, cut into wedges
  • 2 celery sticks, trimmed, thinly sliced
  • 35g (1/4 cup) pecan halves
  • 125g soft blue cheese, crumbled
Instructions:
  • Start by heating 2 teaspoons of oil in a large frying pan over medium heat. Season your pork with salt and pepper, then cook it for 3-4 minutes on each side for a medium doneness, or until it reaches your preferred level of doneness. After cooking, transfer the pork to a plate, cover it with foil, and let it rest for 3 minutes before thinly slicing it.
  • Combine the vinegar and remaining oil in a small bowl and whisk until fully incorporated.
  • Combine pork, watercress, pear, celery, and pecans in a large bowl. Season with salt and pepper, then gently mix together. Serve in individual dishes, garnish with blue cheese, and drizzle with dressing.
