"Elevate pearl barley with savory chicken broth and vegetables for a delicious and satisfying side dish."
Ingredients:
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 2 ribs celery, chopped
  • 1 cup pearl barley
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 green bell pepper, chopped
  • salt and ground black pepper to taste
Instructions:
  • Heat your oven to 350°F (175°C).
  • In a Dutch oven or oven-safe pot, melt butter over medium heat, sauté onion until lightly browned (5-8 minutes), then add celery and cook until starting to soften (about 5 more minutes). Stir in barley until coated with butter, then mix in mushrooms and green pepper. Season with salt and black pepper to taste. Pour in chicken broth, bring to a boil, and cover.
  • Bake in the preheated oven for 30 minutes, until barley is nearly tender. Uncover casserole dish and bake for an additional 15 minutes, until most of the liquid has been absorbed. Season with salt and black pepper to taste before serving.
