Add nutritious mackerel to your family meals for a tasty and healthy boost!
Ingredients:
  • 200g (1 1/2 cups) pearl couscous
  • 27.30 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • Pinch saffron
  • 125ml (1/2 cup) white wine
  • 400g can cherry tomatoes
  • 3 tsp fresh thyme leaves
  • 3 x 115g cans Skinless Mackerel Fillets Lemon Flavour, drained
  • Fresh continental parsley, finely chopped, to serve
  • Extra thyme leaves, to serve
  • Lemon cheeks, to serve
Instructions:
  • Prepare the pearl couscous according to the package directions, then drain.
  • Heat oil in a large frying pan over high heat. Sauté onion and garlic until soft but not colored, stirring often for about 10 minutes on low heat. Stir in saffron and wine, simmer until reduced by half for about 3 minutes. Add tomatoes and thyme and simmer for an additional 5 minutes until slightly reduced. Season with salt and pepper to taste.
  • Gently mix couscous with the tomato mixture, then add mackerel fillets. Cook for an additional 2 minutes until the mackerel is heated through. Sprinkle with parsley and thyme and serve with lemon.
