Peas and broad beans with prosciutto

Prosciutto-wrapped peas and broad beans create a festive and flavorful holiday side dish.
Ingredients:
  • 1kg fresh broad beans (podded) or frozen broad beans
  • 36.40 gm olive oil
  • 1 onion, thinly sliced
  • 1 garlic clove, finely chopped
  • 350g fresh peas or frozen peas
  • 100ml dry white wine
  • 150ml chicken style liquid stock
  • 4 bay leaves
  • 40.00 ml chopped flat-leaf parsley leaves
  • 8 thin slices prosciutto
Instructions:
  • Cook the broad beans in a pot of boiling salty water for 2 minutes or until they are tender. Then, drain the beans and quickly place them in cold water to refresh.
  • Heat oil in a pan over medium-low heat. Sauté onion and garlic for 2-3 minutes until softened. Stir in peas, wine, stock, and bay leaves. Simmer for 5 minutes until liquid reduces. Gently fold in beans and warm. Season generously, stir in parsley, and serve on a platter topped with prosciutto.
