Pecan Banana Cupcakes

Delicious banana and pecan cupcakes topped with creamy frosting.
Ingredients:
  • 0.5 cup butter
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 0.5 cup canola oil
  • 0.33333334326744 cup applesauce
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 3 cups mashed ripe bananas
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 0.5 cup butter, softened
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line two 12-cup muffin tins with muffin liners.
  • Cream together 1/2 cup butter and 1 package of cream cheese until smooth; gradually add brown sugar and white sugar until fluffy. Incorporate eggs one at a time. Blend in canola oil and applesauce. Combine with flour, baking soda, baking powder, cinnamon, and salt until mixed. Stir in bananas and 1 teaspoon vanilla extract, then fold in pecans. Fill muffin liners 2/3 full with batter.
  • Bake the cupcakes in the preheated oven for 28 to 33 minutes, or until a toothpick inserted in the center comes out clean. Allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Cream together 1/2 cup of butter and 1 package of cream cheese until smooth; then blend in confectioners' sugar and 2 teaspoons of vanilla extract until you have a silky frosting. Spread this decadent frosting on the cooled cupcakes.
