Peperonata with pecorino

Peperonata recipe with pecorino cheese pairing.
Ingredients:
  • 1 capsicum, seeded, thinly sliced
  • 3 cloves garlic, halved
  • 4 long red chillies, half seeded, chopped
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) white wine vinegar
  • Slices of pecorino, to serve
Instructions:
  • In a small saucepan, heat oil over medium heat. Sauté capsicum for 8 minutes until soft. In a food processor, blend garlic, chillies, sugar, and vinegar until finely chopped. Stir in the mixture with capsicum and cook for 18 minutes until jam-like. Once cool, serve with slices of pecorino.
