Elevate roast beef with a flavorful herb crust.
Ingredients:
  • 40.00 ml whole black peppercorns
  • 40.00 ml coriander seeds
  • 2 (about 1kg each) beef fillets
  • 250ml (1 cup) balsamic vinegar
Instructions:
  • Preheat the oven to 200°C. Coarsely crush peppercorns and coriander seeds in a mortar, then transfer to a plate. Roll beef fillets in the pepper mixture to coat lightly.
  • Prepare the beef in a roasting pan, drizzle with oil, and generously season with salt. Roast in the oven until your desired doneness is reached, about 35 minutes for medium-rare. Once done, carefully cover with foil and let it rest for 10 minutes before serving.
  • In a saucepan, bring vinegar to a boil over high heat. Reduce heat to medium and simmer for 15 minutes, or until reduced by two-thirds.
  • Slice the beef thinly against the grain and arrange it neatly on a platter. Serve with a side of vinegar for added flavor.
