Peppermint ice-cream sandwiches

Indulge in this irresistible chocolate mint ice cream.
Ingredients:
  • 950g vanilla ice-cream
  • 4 Mint Slice biscuits, finely chopped
  • 16 rectangular ice-cream wafers
  • 2 x 35g pkts Peppermint Crisp, finely chopped
Instructions:
  • Prepare a 20cm square cake pan by lining it with non-stick baking paper, leaving two sides to overhang. Allow the ice cream to soften slightly by placing it in a large bowl for 10 minutes.
  • Combine the biscuit into the mixture. Transfer it into the pan and even out the surface. Chill in the freezer for 30 minutes or until set.
  • Prepare a baking tray with non-stick baking paper. Transfer the ice-cream mixture onto a chopping board. Arrange 8 wafers side-by-side in a single layer on top of the ice-cream. Use a large sharp knife to slice the ice-cream, using the edges of the wafers as a reference.
  • Flip over each ice-cream stack and place the remaining wafers on top.
  • Sprinkle the Peppermint Crisp on a plate. Press the sandwich edges into the Peppermint Crisp to coat them. Transfer to a lined tray and chill in the freezer for 1 hour until firm. Cut diagonally in half and dust with icing sugar before serving.
